08/31/2023 Responsible for consistent preparation and pre-portioning of salad, dessert, and bread items for resident traylines.
Establishes food requirements based on approved menus.
Measures and mixes ingredients for salads and desserts.
Prepares textured foods using robout puree machine, knives, grinders, etc.
May assist in slicing and deboneing meats and poultry.
Assists as needed in replenishing resident traylines and ensures adequate food supply.
Carefully observes the trayline needs so as to replenish before food has completely been served.
All food preparation must meet sanitary codes.
Responsible for filling resident trays according to the diet order and following established menus prepared by a registered dietitian.
Sets up and breaks down trayline for service as assigned.
Works at all stations of trayline; starter, cold food station, bread/condiments station, hot vegetables/soup, entr e station, checker/monitor, loader, and understanding both regular and modified diets.
Interprets resident menu and correctly fills resident trays according to menu.
Responsible for specific, as well as, general cleaning duties in the dishroom and trayline areas.
Responsible for using apppropriate cleaning products and following instructions provided on the cleaning products.
Specific cleaning assignments include:
trayline walls, metro wire racks, tray carts, trayline floors, ice cream freezers, pre-portioned rack carts, trayline top, under trayline belt, trayline belt metal trays, two trayline pre-portioning work table, walk-in refrigerator, reach-in refrigerator, underneath trayline, dish machine (set up and break down), dishroom floors, dish holder racks.
Dishroom:
Responsible for scraping, pre-washing, loading, and unloading of dishes, trays and carts.
Ensures dish machines area clean and dishroom is set up neatly and temperatures are accurate.
Prepares nourishments in accordance to tally sheets.
May use meat slicer for preparation of nourishments.
Ensures proper portioning of foods are prepared according to labels.
Adheres to appropriate food temperatures for service of meal and notifies supervisor if temperatures are not safe.
Verifies that foods are prepared and stored at accurate temperatures.
Attends required inservice training and meetings scheduled and incorporates information learned in trainings/meetings into daily job duties and responsibilities.
While on duty, follows and carries out Florida State Hospital and department safety practices and policies.
Performs other related duties as assigned.
